This restaurant has withstood the changing times and always maintains the FIVE STAR position. I try to get to the Flagstaff at least once every 3 months. After all they say, “to much of a good thing isn't bad”. I the case of the Flagstaff I can never seem to get enough.
They have the best menu, the best food, the best views, the best wines, and the service is outstanding. I consider this one of the finest restaurants in west and perhaps the finest in Colorado.
Executive Chef & Partner Mark Monette literally grew up in the industry as his parents had been in the restaurant business long before Mark was born. Mark was only 10 when his dad, Don Monette, founded the Flagstaff House Restaurant in Boulder, Colorado. By age 14, Mark was bussing tables at the Flagstaff House Restaurant.
Mark's love of cooking and passion for fine cuisine took him to several Four Star restaurants in New York City and to various Michelin Three Star restaurants in France and the Orient where he worked with several master chefs, including Bernard Hermman and Thomas Keller.
Mark returned home in 1985 to become Executive Chef of the Flagstaff House and has been responsible for the restaurant's culinary delights ever since. His unique style of cooking incorporates French American cuisine with Asian accents.

While at the Flagstaff House, Mark has had the opportunity to prepare a special menu for the Emperor and Empress of Japan, Emperor Akihito and Empress Michiko, as well as the Prime Minister of Japan, Ryutaro Hashimoto, and his foreign ministers. The restaurant has also hosted many dinners for notable culinary dignitaries including Paul Bocuse, Angela Gaja, and Robert Mondavi.
Mark's menu changes daily to take advantage of the freshest seasonal ingredients including fresh fish flown in daily, locally grown organic products, and herbs from his own organic garden. Hours of Operation
Flagstaff House Restaurant is open for dinner from 6 p.m. to 10 p.m. Sunday through Friday, and opens at 5 p.m. on Saturday. We are closed some holidays. We look forward to having you dine with us.

Dress Code
The Flagstaff House Restaurant enforces the following dinner dress code policy. Business casual attire is permitted at all times. Acceptable business attire includes collared shirts, casual pants, slacks, skirts and dresses. Clothing must be neat and presentable.
The following attire is not acceptable: shorts, t-shirts, athletic attire, tank tops, sweatsuits or jogging suits, ripped, torn or frayed clothing.
