The Timber Hearth Grill is located 15 miles west of Vail at the Cordillera Golf Club. This is white tablecloth restaurant. The food, service and atmosphere is wonderful, mountain lodge style. The restaurant is open for Lunch and Dinner. The Timber Hearth has a new Chef Brian Bernstein who is no stranger to the Vail Valley having worked at the Left Bank and the French Press. Brian’s cuisine is known as refined American, featuring the purity of Colorado’s local ingredients.
The lunch menu features a Sandwich Board of Carved Beef Tenderloin, Grilled Beef Hot Dogs, Pulled BBQ Pork, Grilled Chicken Breast, and a Timber Hearth Burger. The there is also a build your own Sandwich menu. My dinner July 4, 06 features Eagle River Smoked Salmon Blinis, Mesclun Salad with Fresh Berries, Roquefort Cheese, with Sherry Vinaigrette dressing. For the entrée I had the Grilled Colorado Lamb Porterhouse with mint demi-glace and red potatoes. I strongly recommend the Timber Hearth to be added to your dining experience while visiting the Vail Valley. The drive is worth it. Timber Hearth Grille The popular Timber Hearth Grille offers inspired American cuisine with a Western flair, including menu items such as veal chops stuffed with prosciutto. A variety of starters and a comprehensive list of French and California wines complement your meal. Timber Hearth’s three-story river rock fireplace, cozy furniture, and picture windows overlooking the golf course provide an unforgettable dining experience. Horse-drawn sleigh rides are available during the winter season. The Timber Hearth Grille is open seasonally, please call 970-926-2200 or contact the concierge for reservations. Closed Mondays.
