The winery is recognized as an American pioneer of unfiltered wines, a philosophy that adds complexity to the winemaking process and demands meticulousness and attention to detail, but maximizes all the subtle characters of the fruit.

Grapes for the profound and powerful Chardonnay are grown on the Newton estate in the Carneros region and other marine-influenced sites where bay breezes and morning fog combine to create the cooler climate idea for full and rich flavor development. Red grapes are grown on the Spring Mountain estate and display the intensity of color and flavor typical of mountain wines.

Unfiltered wines are favorites of savvy connoisseurs and may be found in fine wine shops and dining establishments around the world.

Chardonnay - The white grape of Burgundy, and probably the most familiar name to American consumers. In Burgundy, the name of the grape generally does not appear on the label-only the place where it was grown (e.g. Meursault, Puligny Montrachet, etc.). It is also the grape of Chablis, where it's habit of early ripening puts it at risk for Spring freezes and hailstorms. It is responsive to a wide variety of wine-making techniques, and use in Champagne as well. The American style has often been to put Chardonnay fully through a secondary, malolactic fermentation, producing a wine that is often fat and rich. In Burgundy, by contrast, Chardonnay produces white wines of great power, but also of great acidity and crispness. It usually maintains a high level of alcohol, and the tremendous diversity of Chardonnay winemaking styles across the globe make wines from this grape one the most interesting and popular varietals. newtongardens.jpgThe single square mile of hillside pioneered by the Newtons in 1977 is an impressive site, with expansive vistas of Napa Valley and beyond. It is also notoriously difficult to farm, presenting challenges for the winegrowing team who must care for a vineyard located on a 30˚ slope at elevations ranging from 500 to 1600 feet above sea level. One hundred twenty of the 560 acres are planted in terraces to Merlot, Cabernet Sauvignon, Cabernet Franc, and Petit Verdot – 112 separate parcels in all. Each parcel differs in terms of soil types, sun exposures, and individual microclimates. The parcels are set among the native vegetation to preserve the ecosystem of the hillside.
 
Chardonnay is grown in Carneros, and other coastal influenced vineyards where the cool climate contributed to fine flavor development and crisp acidity. Soils are influenced by ancient volcanic eruptions, and are remarkably diverse for such a small area, ranging from loam to clay to rocky. The struggle for nutrients results in low yields and enormously concentrated flavors in the fruit. The vineyard blocks are planted to maximize sunlight, exposing vines in the morning, then using the mountain’s crest to shelter the grapes from the most intense afternoon sun.
