Recently, Mario Batali launched yet another great book. No, not another Italian Book. This one is on Spain. Can you believe it? Mario, Spain? You bet! This book is excellent and why not? Mario is an excellent Chef and don't forget he has two “Spanish Restaurants” In New York City in addition to his very famous Italian restaurants. My wife found a great recipe in Mario's new book on page 58, known as “Tortilla”. This is essentially the National Dish of Spain with the possible exception of Paella (most Americans believe). This dish is eaten for breakfast, lunch and dinner and has many variations, however we chose the breakfast edition. This is a potato and egg skillet offering. You may have to make it a few time to get the hang of it, but that's the fun of making new dishes. The final part is a bit trickie, when flipping the mixture over, but my wife got it the first time even with her almost useless left hand. Click here to see a recipe and pictures by Sarah Jay. This dish is great for New Year's Day Breakfast with Champagne. Molly put a little sour cream and caviar on top and garnished with parsley. I promise it will be a hit!
